Ingredients

400g roux
100g parmesan
6 egg yolks
1 whole egg
  Flour
  Breadcrumbs

Recipe steps

Boil the milk and add the cheese and roux

Boil well while stirring

Then add the 6 egg yolks and boil again

Place the mixture on a baking sheet about 1cm thick and leave to cool for 24 hours

Cut 5cm x 3cm squares of cheese, toss them in the flour, then in the beaten whole egg and the breadcrumbs

Fry in the deep fryer for 5 minutes at 175°C

Serve with a small salad
