Herby Kefir Scones

Savory herb scones with Luxlait kefir, Rose Butter and Emmental golden on the outside, fluffy on the inside!

Ingredients

2 teaspoons sugar
1 teaspoon salt
250g flour
1 pack baking powder
2 handfuls fresh herbs basil, parsley, chives

Recipe steps

Preheat the oven to 220°C.

Chop the fresh herbs with a knife.

In a large bowl, combine the flour, baking powder, sugar, and salt.

Cut the butter into small cubes. Add it to the flour, and work it in by rubbing with your fingertips until the mixture resembles fine crumbs.

Add the grated Emmental cheese, herbs, and cold kefir to the mixture. Mix with a spatula.

Transfer the dough to a floured work surface. Work it briefly to remove gas, then form a 3 cm-thick square. Cut it into four pieces, stack them on top of each other, and flatten them with your hands or a rolling pin. Repeat the process a second time.

Form a 3 cm-thick rectangle and cut it into 8 equal portions. Place them on a baking sheet lined with parchment paper.

Melt a little butter and brush it over the tops of the scones.

Bake for 12 to 15 minutes until golden brown.
