One Pan Curried Rice Noodles

Lactose-free rice noodles with curry and cream

30 minutes' cooking time

For the broth

500 ml boiling water
2 tablespoons curry paste
2 tablespoons soy sauce
1 thumb-size piece of ginger
1 garlic clove

Recipe steps

Preheat the oven to 200°C.

Peel the carrots and core the red peppers. Thinly slice the veggies.

In a large baking dish, whisk the dairy-free cream, boiling water, curry paste, soy sauce,grated ginger, and grated garlic.

For the noodles

300 g rice noodles
200 g shrimp, or tofu cubes
2 elongated red peppers
1 small bok choy
3 medium carrots

Recipe steps

Add in the rice noodles fi rst and then the veggies. Cover with aluminum foil and bake for15 minutes.

Remove the foil and add the shrimp. Cover the baking dish back up and bake for anadditional 15 minutes or until the shrimp and noodles are fully cooked.

Optionally serve with lime wedges, fresh cilantro, and sesame seeds.

For garnish (optional)

1 handful of fresh cilantro
2 scallions
2 tablespoons sesame seeds
1 lime
