Skyr Summer Roll
The perfect summer recipe
Ingredients
Recipe steps
Chop all vegetables (except the iceberg salad) together with the Skyr and salmon until well combined.
Lay 3 rice paper sheets on a work surface so that their edges overlap in the center (each rice paper has to be dipped in cold water for about 3 seconds). Add two leaves of iceberg salad in the center. Place two large spoons of the chopped filling into the lettuce. Fold the salad together with the rice paper and wrap it tight.
Additionally prepare the sauce, combining the peanut butter, soy sauce and lime juice.
Serve the summer rolls immediately with a creamy peanut sauce!
