Skyr chocolate mousse
A delicious combination of chocolate and skyr

Separate the egg whites from the yolks.
Add the Skyr, egg yolks, milk, sugar, vanilla and a pinch of salt to a saucepan. Heat over medium heat and whisk constantly for 5 minutes. The mixture should thicken slightly and become frothy. Do not bring to a boil.
Remove the saucepan from the heat. Add in the chopped chocolate and cocoa powder. Mix until the chocolate is melted. Pour the mixture into a large mixing bowl and leave to cool for a few minutes.
Beat egg whites until stiff.
Gently fold the egg whites into the chocolate mixture.
Pour the chocolate mousse into 4 small ramekins. Chill in the refrigerator for at least 2 hours.
