Oven pasta with dried tomatoes

Ingredients

400g yellow onions
100g sun-dried tomatoes in oil
4 tbsp sun-dried tomato oil
1 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
400g pasta
150g grated Parmesan cheese
  Fresh basil, for garnish

Recipe steps

Preheat the oven to 190°C.

Peel and fi nely slice the onions with a sharp knife.

Cut the sun-dried tomatoes into small pieces.

Pour the oil from the sun-dried tomatoes into a baking dish. Add in the sliced onions, sun-dried tomatoes, thyme, salt, and pepper. Massage the onion with the oil.

Cover the baking dish with aluminum foil and bake for 1 hour.

Cook the pasta in salted boiling water. Save 200 ml of pasta water before draining.

Add the sour cream, grated parmesan, and pasta water to the baking dish with the onions. Stir until combined. Then, toss in the pasta.

Serve with fresh basil.
