Cinnamon Swirl Eggnog Cake

Eggnog o'clock

Quantités

3 Eggs
100g Sugar
250g flour
1/2 pack backing powder
1/4 teaspoon salt
1 Apple
3 tablespoon brown sugar
1 tablespoon cinnamon
80 g icing sugar
1/4 tablespoon vanilia bean powder
1-2 tablespoons Luxlait Eggnog

Recipe steps

Preheat the oven to 180°C.

Melt the butter in the microwave or a double boiler. Set it aside to cool for 10 minutes.

In a large mixing bowl, whisk the eggs and sugar together vigorously. Stir in the eggnog.

Stir in the flour, baking powder, and salt until you obtain a smooth batter.

Grate the apple using the large holes of a box grater.

Fold the grated apple and melted butter into the mixture.

In a small bowl, mix the brown sugar with the cinnamon.

Pour half of the cake batter into a loaf tin lined with baking paper. Sprinkle with the cinnamon sugar. Top with the remaining batter.

Drag a butter knife through the batter a few times to create big swirls.

Bake for 40 minutes at 180°C, fan.

Leave the cake to cool completely.

In a small bowl, combine the icing sugar, vanilla, and eggnog, then drizzle the mixture over the cake. Put the cake in the fridge until the glaze has set, then slice and serve.
