Serves 2 - Prep time: 10 minutes - Cooking time: 5 minutes
With pear and caramelised nuts
3 tbsp hazelnuts
2 tbsp walnuts
1 clove of garlic
1 lemon, juice and zest
4 tbsp olive oil
2,5 tbsp honey
1 tbsp water
4 handsful of rocket
salt and pepper
Bread of your choice
Wash the pear and cut it in half. Remove the core and the seeds and slice thinly.
Roughly chop the hazelnuts and walnuts. Grate the zest of the lemon and then juice the lemon. Finely chop the clove of garlic.
In a small saucepan, over a medium heat, add all the nuts and the olive oil. Cook until they are slightly brown.
Add the garlic and cook until it begins to brown. Then add the lemon zest and juice, honey, water, and salt (to taste). Mix and cook until it boils, then cook for another minute. Remove from the heat. It should be the consistency of a dressing, but not too liquid.
On a plate, spread a layer of cottage cheese, then top with rocket and the sliced pear. Drizzle the hot dressing with the nuts over the salad and season with salt and pepper. Serve immediately with some bread.
