Pinecone shaped little cocoa biscuits, perfect for the festive season!
Ingredients
50ml vegetable oil
1 egg, room temperature
300g all-purpose flour
20g unsweetened cocoa powder
1 tsp. baking powder
1 pinch salt
Spices optional
Recipe steps
Sift together flour, baking powder and cocoa, set aside.
In a mixing bowl, beat the butter with the powdered sugar and a pinch of salt. Add oil and mix until light, about 3-4 minutes. Add the egg. Mix until combined.
Add the sifted dry ingredients in 2 steps and beat just until combined. Add spices (ground cinnamon, cloves, nutmeg, ginger - optional) and mix into a homogeneous mixture. Take care not to over-knead the dough.
Wrap the dough in a cling foil and refrigerate for 30 minutes.
Pinch off small pieces of the dough (about 40 g) and form balls with the palms of your hands. Form a cone shape, place them on a baking tray lined up with a baking paper and flatten slightly.
Make diagonal cuts using a sharp knife on the top of the cookie cones.
Put the baking tray with the formed cookies in a refrigerator for about 15 minutes, while you heat the oven.
Bake the cookies in a preheated oven at 180°C for about 15 minutes. Baking time depends on your oven.
Cool the cookies and dust with powdered sugar. Or add your favorite spread and make cookie sandwiches.
