Rhubarb clafoutis
Rustic and comforting dessert, rhubarb clafoutis

Preheat the oven to 180°C. Butter a 20 cm oven-proof dish.
Chop the rhubarb into 2 cm pieces and combine with 1 tbsp of the measured caster sugar. Set aside for 10 minutes.
Add the flour to a large mixing bowl with a pinch of salt and the remaining caster sugar. Whisk in the eggs, followed by the milk and the remaining melted butter until you have a smooth batter. Stir in the vanilla essence.
Add the rhubarb to the prepared dish and pour the batter into the dish.
Bake for 35 minutes. Allow to cool for at least 10 minutes and enjoy warm or cold.
