Kachkéis Tartiflette
A creamy, hearty tartiflette with Kachkéis and bacon

Recipe steps
Peel and cut the potatoes into 1-cm-thick slices. Precook them in boiling salted water for 10 minutes.
Cut the onion in half and slice it thinly.
Sauté the bacon in a hot pan until it releases some grease. Add in the onion slices and sauté for 7-10 minutes over medium heat.
Optionally, deglaze with white wine.
Stir in three-quarters of the Kachéis and the sour cream. Season with salt and pepper.
Preheat the oven to 200°C.
Rub a peeled garlic clove onto the base of a baking dish.
Arrange a layer of potatoes on the bottom of the dish. Top with half of the onion and bacon mixture. Repeat this process two more times, finishing with a generous layer of Kachkéis.
Cover with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 to 15 minutes, until golden brown on top.
Garnish with fresh parsley.
