A Mexican dish with typical flavours of Luxembourg
Ingredients
30 g frozen peas
1 spring onion
2 Luxembourgish cooked smoked ham
3 eggs
½ tsp summer savoury (sarriette/Bounekräitchen)
¼ tsp salt
1 pinch of pepper
4 tortillas wraps
Recipe steps
Preheat the oven to 160°C fan.
Cook the broad beans and the peas for 2 minutes in boiling salted water. Drain and run under a cold tap to cool.
Slice the spring onion and mix with the cooled beans. Cut the beer cheese into small pieces.
Line 10 holes of a muffin tin with muffin paper
Cut each tortilla wrap into 12 triangles. Arrange 6 tortilla slices in a star-shape in each hole, with the pointy bits sticking out.
Cut the ham into squares and put in each hole on top of the tortillas.
Distribute half the cooked broad beans, peas and spring onions between the muffin holes, top with all the cheese then finish with the remaining greens.
Beat together the eggs, cream, summer savoury and season with the salt and pepper.
Pour the egg mixture into each muffin hole and bake in the oven for 18-20 minutes.
The tortillas can be eaten hot or cold.
