Tasty omelette wraps, served in 15 minutes

2 servings • 10 minutes prep time • 5 minutes cooking time

Zutaten

1/2 red bell pepper
1/2 orange bell pepper
2 handfuls cherry tomatoes
1 spring onion
1/4 tsp garlic powder
1 pinch salt & pepper
2 wheat tortilla wraps
2 handfuls arugula
4 eggs

Recipe steps

Core the bell peppers and cut them into small dice. Finely dice the tomatoes. Slice the green part of the spring onion.

Beat the eggs in a large bowl. Season with garlic powder, salt, and pepper. Add in the veggies.

Heat a pan with a little butter. Add in half of the omelette mixture and cook for several minutes over medium heat. Once it starts to set, cover with 4 slices of Emmental cheese and a tortilla wrap. Flip the omelette and cook for another minute. Garnish with fresh arugula and fold the omelette wrap in half.

Repeat with the rest of the omelette mixture.
